I love crepes! Anytime I see a crepe restaurant it draws me in. The smells, the flavors, sweet or savory, I am all in. Every now and then I whip up a batch of my own homemade crepes. One of my favorite flavor combinations is banana and Nutella. To make it a little healthier, I have modified these crepes to be made out of whole wheat flour and include Chocolate Hazelnut PocketFuel as a substitute for Nutella. It’s a much healthier option, vegan, and just at delicious!

Whole Wheat Crepes
1 cup whole wheat pastry flour
1 cup non-dairy milk
1/4 cup water (optional for thinner crepes)
1 teaspoon vanilla
1 tablespoon oil
Pinch of salt
Mix all ingredients in a blender and refrigerate for 1 hour. Pour batter in small amounts to lightly coat bottom of a heated and oiled pan. Cook until bubbles form, then flip over and cook on other side.
Fill with a thin layer of Chocolate Hazelnut PocketFuel and sliced bananas or your favorite toppings!
