Pumpkin, pumpkin, pumpkin! This delicious treat is everywhere as we near the Thanksgiving holiday. Today I just couldn’t resist whipping up a quick batch of pumpkin spice french toast. It’s a quick, fun way to get a sweet pumpkin treat while also providing protein and healthier carbs. I made my french toast with whole grain bread, so it was a bit on the healthy side, but after adding pumpkin and maple syrup it was delicious without being too sweet.
Pumpkin French Toast Recipe (single serving)
2-3 pieces Whole Grain Bread (I used Alvarado Bakery Bread)
3 Tablespoons Pumpkin Puree
1/4 teaspoon Pumpkin Pie Spice
Heat skillet with olive oil. Crack eggs and whisk together with the pumpkin puree and pumpkin pie spice in a separate bowl. Soak bread slices in egg batter and place in pan. Cook until lightly browned on the bottom side and then flip in pan and cook other side. Repeat with remaining pieces of toast.
Serve warm with maple syrup, powdered sugar or almond butter.
