Preheat oven to 375 degrees.
Combine flour, baking soda and salt in a separate bowl.
In the second bowl, cream together the butter and white & brown sugar. Add the egg and vanilla and beat until creamy. Add the flour mixture. Mix. Add the Mighty Nut Peanut Butter Chocolate. Mix. Add the oats and coconut. Mix. Finally, fold in the chocolate chips.
Scoop rounded dough onto a baking sheet coated with parchment paper to prevent sticking.
Bake for 10-11 minutes or until golden brown.
Let cool or serve warm with ice-cream.
